Superb Chardonnay paired to perfection with signature dishes from Executive Chef Darren Badenhorst takes centre stage on Friday, 29 April at the first Wine & Dine Collaboration dinner for 2016 at Grande Provence Heritage Wine Estate in Franschhoek.
Featuring fellow producers DeMorgenzon, Newton Johnson Vineyard and Iona Vineyards, the evening, hosted by Grande Provence winemaker Karl Lambour, is a showcase of some of the Cape’s finest Chardonnays.
First up in the food pairing stakes is Newton Johnson Family Vineyard Chardonnay 2015 and butter poached, BBQ lobster with xo quinoa sea sand, rounded off with pickled kombu courgette, ponzu infused cucumber and dill gel, with sweet miron gribiche.
Next up is DeMorgenzon Chardonnay Reserve 2015 paired with confit guinea fowl and salt cured duck spindle, with a mixed bean and Turkish apricot ragout, vanilla parsnip and wagyu bouillon.
The Grande Provence Chardonnay 2014 accompanies the third course of farmed cob, with a veil of coconut Laksa air, baby leeks, a dash of fermented black garlic, and smoked Alaskan crab butter.
Iona Chardonnay 2015 brings the evening to a close with a dessert of “chocolate forest greenhouse”- 80% hazelnut pot au crème with Tonka bean semi-freddo and Madagascan vanilla poached shemeji mushrooms.
