In the Middle Ages, salt was a precious commodity as it was necessary for both human and animal health and was the only way to preserve food. The various sovereigns, therefore, imposed a tax on salt, the "gabelle", to secure their own source of income, as was the case in Nice. The salt from Nice was thus going to enrich the new territories acquired by the Savoy and crossed the Alpine passes.
The routes taken by the salt evolved over time according to territorial claims, wars and the progress of transport methods. Through the cross-border walking tour "the salt routes: the Pagarin Route" and its accompanying guidebook (available for download), we invite you to discover the history of these routes as well as the heritage and culture of this great region.
In fact, in 1435, our hero "Artémio" travelled the salt road through the Vésubie valley to reach Piedmont. This road was built in four years, with stone bridges and paved paths capable of supporting the weight of caravans. It was built thanks to an entrepreneur from Nice, Paganino Dal Pozzo, after whom the "Pagarine Road" is named.
